Sapin-sapin is a colourful Filipino layered sticky rice cake made from glutinous rice, rice flour, coconut milk, sugar and condensed milk. Usually garnished with latik and toasted desiccated coconut ( budbod ). In this recipe i made mini version of sapin-sapin unlike the usual sapin-sapin that we use to know.
INGREDIENTS:
- 2 1/4 cups glutinous rice flour
- 1/2 cup rice flour
- 1 cup sugar
- 4 cups coconut milk
- 1/2 cup condensed milk
- 1 tsp. ube extract
- 1/2 tsp. violet food color
- 1 tsp. pandan extract
- 1/2 tsp. green food color
FOR GARNISHING:
For LATIK
- 1 can ( 400ml ) coconut cream
For BUDBOD
- 1 1/2 cups desiccated coconut or sapal ng niyog
- 5 teaspoons sugar
