Ingredients
Dough:
• Flour (500 g)
• Instant Yeast (7.5 g)
• Sugar (30 g)
• Honey (1 tsp)
• Vegetable Oil (50 g)
• Butter (25 g)
• Egg (1 piece)
• Warm Milk (250 g)
• Salt (10 g)
Filling:
• Akkawi Cheese (350 g)
• Mozzarella Cheese (120 g)
• Cream Cheese (60 g)

Cooking Instructions
Dough Preparation
In the mixing bowl of a stand mixer, put all the ingredients except the salt. After the second round of mixing, add the salt.
Mix on medium speed for 10 minutes.
Put the dough in a bowl, slightly brushed with oil. Cover with cling film and set aside for 30-40 minutes.
Filling Preparation:
Mix all the three cheese together. Taste it and season it with salt.
Assemble the pie:
Pre-heat the oven to 170C
Flatten the dough like a big circle. Put the filling in one half then fold it and seal it by fingers.
Transfer to a tray and cover with a cling film. Set aside for 15 minutes.
After 15 minutes, uncover, and brush the pie with eggs and add black seeds.
Put in oven for 13 minutes approx. Take it out, brush with eggs again and put in oven again applying top heat only for 2-3 minutes until it is golden.
Now ready for service.
