Enjoy crispy french toast casserole made from leftover bread pieces. Are you tired of all the corner pieces from the bread or from making bread crumbs from all the leftover edges that your kids just won’t eat? I know I am. So in my pursuit of not making any more crumbs, I made this recipe of French Toast Bake or French Toast Casserole and it turned out so amazing that it has become a regular. Soft yummy french toasted topped with crisped oat streusel covered in rich maple syrup with a scoop of vanilla ice cream. Now that is comfort food at its best! This recipe is super quick and easy. You can use whole slices of bread for it or the end/corner pieces and the edges. If you are using whole slices, use a day old bread as it absorbs the liquid better. Whatever you use, just cut them into strips or small squares. I personally prefer strips. I usually collect all the corner pieces of the bread and edges from the sandwiches in a ziplock and put them in the fridge or freezer. Fridge; if I have a lot and I know I will be making it within the same week and freezer; if I know it will take time to have enough for a large dish. If you have it in the freezer, just remember to take the bag out of the freezer and let thaw in the fridge overnight. In my house, we love having this for breakfast. So I usually bake a large dish and we enjoy it throughout the week. Which makes it perfect for people with a busy lifestyle. Bake a dish over the weekend and just take out, microwave and enjoy. Not only that, but you can also assemble it the night before and bake it for brunch or any party, really. It can also be customized and you add a variety of fresh and dry fruits and nuts to it. It really is the perfect, easiest dessert that will be enjoyed by all.
