This recipe is for making Kerala Style Appam without Yeast or Baking Soda.
Ingredients:
Basmati Rice: 1 Cup
Black Gram/Urad dal: 1 TBSPN
Freshly Grated Coconut: 1/2 Cup
Cooked Rice: 1/4 Cup
Sugar: 1TBSPN
Salt: 1TSPN
Steps:
Combine Rice and dal. Wash it 4 times or until the water runs clear.
Soak the grains in enough water for 4 hours
Drain the water. Take a grinder bowl and grind the soaked grains without water for a minute.
Add coconut, cooked rice and 1/2 cup of water. Grind Well.
Slowly add the rest of the water a little at a time. Add Sugar and Salt. Combine Well.
Check the consistency of the batter and add more water if required. The batter should be pourable.
Transfer the batter into a steel or glass vessel and keep it in a warm place for 8 to 10 hours for fermentation.
I keep the batter in oven overnight to make sure that the batter rises well.
After 10 hours gently mix the batter and start preparing appams.
